Nut Muffin Recipe

Wonderful Nut Muffin Recipe

2 1/2 cups ground nuts (use raw almods, hazelnuts, brazil nuts or a combination)
1/3 cup honey
1/2 tsp baking soda (you can buy gluten free!)
1/4 cup melted coconut oil
3 beaten eggs
Pinch of celtic sea salt

1.> Grind nuts one cup at a time in a blender orprocessor. \measure out 2 1/2 cups into a bowl.
2.> Add beaten eggs and honey. Stir to combine
3.> Add oil and salt. Mix well.
4.> Add baking soda and stir.
5.> Oil muffin pans and fill to 1/2 to 3/4 full.
6.> Bake at 325 degrees for 15-20 minutes or until a toothpick somes out clean from the center.
7.> Cool pans on a wire rack.

Makes 16 large muffins.

Make mini muffins! This recipe makes approximately 42 mini muffins.

Freeze leftover ground nuts and use for casserole toppings!
